Summer’s always approaching. So it’s easy to picture yourself under the shade of a coconut palm, on a tropical island, completely carefree. But, even in the rush of our busy lives, the taste of the tropics remain as close as your nearest supermarket!Coconut is a superfood that provides super weight loss! Our coconut crack bars are just one of the many easy healthy recipes that can help you eat healthy, improve hormone balance, decrease appetite and lose weight. Why?

Coconut contains healthy fats (that we know are essential to every living cell of our body) called medium chain fatty acids. These medium chain fatty acids increase fat oxidation, which means you burn more calories. Coconut also contains lauric acid, an excellent source of saturated fat that studies show can assist in menopause and may also have positive effects on estrogen levels.

So, while indulging in these tasty, coconut loaded healthy bars that take less than 10 minutes to make, feel good that you’re right on track for weight loss and better health!

Ingredients

1 cup unsweetened shredded coconut (80g)
1/4 cup agave or maple syrup
(or 1/4 cup water and 2-3 nunaturals stevia packs)
2 tbsp virgin coconut oil
1/2 tsp pure vanilla extract
1/8 tsp salt

Optional:
Chocolate chips made from Dr. Espen’s Cacao Powder

Instructions:

1. In a food processor, combine all ingredients. (You can also mix them by hand using a bowl if you don’t happen to have one.)
2. After mixing, squish the soft and creamy mixture into a small container. Let it chill in the refrigerator for at least an hour. Check on it and see if it’s chilled enough to be sliced on. If so slice away!
(You may place it in the freezer but don’t let it get too frozen so that you won’t be able to slice through it.)
This can be stored in the fridge for at least a few weeks. Enjoy!
